  • End of August, should have milky ooze when squeezed
  • Pick in bucket 🪣
  • Wash and submerge under fresh water every day for 3days
  • Place in brine, water + salt 10:1, use plate to keep submerged 3months
  • Taste to check if bitterness gone
  • Finally jar in ratio of 2:5:20, salt:vinegar:water
